Low-Carb Flour Tortillas
½ cup flax seed meal
¼ cup whole wheat Flour
¼ cup soy Flour
¼ tsp salt
1 tsp baking powder
1 tbsp. extra light Olive Oil
½ cup warm water
2 Plastic sheets (circumference equal to the tortilla press)
In a medium size mix bowl add flax seed meal, whole wheat flour, soy flour, salt and baking powder; mix well. Add water and oil and mix well until a dough is formed. Let it set for about 5 minutes covered with a dry kitchen cloth.
Put a hotplate on the stove on medium heat. Let it heat while you make 10 equal size balls with the dough. In a tortilla press machine put a plastic sheet on one side, place one ball in the center then put the other plastic sheet on the top of the ball dough and pressed until you make a thin tortilla. Put the tortilla on the hotplate and cook approx. 2-3 minutes per side (the tortilla will inflate a little bit when turned). Lightly press the tortilla. Place the tortilla in a dry kitchen cloth and cover it with the same cloth to keep the tortilla warm. Repeat the process for each dough ball.
