Spiced Okra with Onions
2 pounds frozen Okra (thawed) or Fresh (cut)
2 medium Yellow Onions, cut in half and thinly sliced
1 can Diced Tomatoes
2 Tbs. Coconut Oil
2 tsp. Amchoor powder
1 tsp. Paprika
½ tsp. Turmeric
½ tsp. Pepper
½ tsp. Salt
½ tsp. Seasoned salt
Cut okra if fresh, set aside.
Slice onions, set aside.
Prepare spice mixture, set aside.
In a wok heat coconut oil on medium-high and sauté onions 5-8 minutes.
Add spice mixture and mix thoroughly; stir-fry on medium heat for 2 minutes.
Add tomatoes and stir-fry 1 minute.
Add okra and stir-fry 2 minutes.
Cover and steam over low heat for 15 minutes if fresh, or 5 minutes if frozen.
Serving suggestion: serve over a very thin layer of basmati rice, Matar Makhani, and Split Black Gram.
